How Ryan cooks steaks indoors

Original post author: Ryan I cooked up these giant steaks earlier this week WITHOUT setting the smoke detectors off. They came out good! For my own notes:

  1. salt, pepper and vegetable oil on both sides of steak

  2. preheat oven to 485

  3. using cast iron pan, cook steak 60 seconds on each side on stove with medium-hot heat. High heat causes better sear, but will smoke.

  4. cook in oven for 5 minutes each side for medium-rare. This number should be adjusted plus or minus 30 seconds to a minute to account for desired doneness and mass of steaks.

  5. let sit 2 minutes
